FERMENTATION WINE AND 1 ª
Smooth and rapid extraction of 60% of the wine. Filtration of must and fermentation between 15-18 º C.
2ª FERMENTATION AND AGING
Bottle fermentation and aging in contact with yeasts, aged between 12 and 15 ° (temperature of the caves) until the time of disgorgement, when ejecting the yeast and add the liquor issue.
